Sautéed Dandelion Sandwiches

Choose only the youngest sprouts of dandelion for this recipe. Dandelion is naturally a bitter green and as it grows it becomes more bitter. The young leaves are delicious.

4 tbsp good quality olive oil
2 cloves garlic, finely chopped
3 potatoes, cooked, peeled and sliced
2 lbs. young dandelion greens, washed
Salt and freshly ground black pepper to taste
2 tbsp lemon juice
12 slices buttered bread of your choice

Serves 6

Place a large frying pan on medium heat and add the oil and garlic. Add the potatoes and fry till golden brown on both sides. Add the dandelion leaves and sauté just long enough to wilt the leaves. Season with salt, pepper and lemon juice. When the dandelion mixture has cooled to room temperature, divide it to make each sandwich.
Add this to a wonderful picnic lunch and enjoy!
