Crème Fraiche

Many specialty stores do sell crème fraiche, but you can make a good substitute at home. Crème fraiche is a great addition to sauces or soups, but it must be put in at the last minute and should not be boiled. It’s also a delicious accompaniment to fresh fruit and desserts in place pf whipped cream.

1 cup whipping cream
1/3-cup buttermilk
1 tsp fresh lemon juice

Combine all ingredients in a glass jar. Cover and let stand at room temperature in a warm (not hot) place for 8 to 24 hours, or until very thick. Give it a shake every hour or so to keep it from breaking up. When it looks ready, give it a good stir, cover and refrigerate. Will keep in the refrigerator for up to 1 week.
Makes about 1-1/3 cups.
